1/2 cup blanched slivered almonds
1 cup dried apricots
2 tablespoons unsweetened shredded coconut
1 tablespoon white chia seeds
1 tablespoon honey
1/2 teaspoon pure vanilla extract
1/8 teaspoon ground cardamom
1/8 teaspoon kosher salt
Directions:
1. Prepare the Ingredients: In a food processor, pulse the slivered almonds until finely chopped. Next, add the dried apricots, shredded coconut, chia seeds, honey, vanilla extract, ground cardamom, and kosher salt. Process until the mixture is finely chopped and well combined.
2. Shape the Balls: Form the mixture into 1-inch balls, using about 1 heaping tablespoon for each. For an extra touch, roll the balls in shredded coconut.
3. Store and Serve: Refrigerate the energy balls in an airtight container. They will stay fresh for up to 1 week.
