Skillet Salsa Shrimp with Spinach and Feta
Yields: 4 servings
Total Time: 15 minutes
Ingredients:
- 1 tablespoon olive oil
- 4 cloves garlic, finely chopped
- 3 strips lemon zest, thinly sliced
- 1/2 jar (15.5 oz) salsa
- 8 oz tomato sauce
- 20 shrimp, peeled and deveined
- 2 cups baby spinach
- 1/4 cup crumbled feta, for garnish
- Flatbread, for serving (optional)
Directions:
- Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the garlic and lemon zest, cooking until the garlic starts to brown, about 1 minute.
- Simmer Sauce: Pour in the salsa and tomato sauce. Bring the mixture to a simmer.
- Cook Shrimp: Place the shrimp into the sauce, making sure they are submerged. Cover the skillet and cook for 3 minutes.
- Add Spinach: Stir in the spinach and cook until it begins to wilt and the shrimp turn opaque, about 1 to 2 additional minutes.
- Finish and Serve: Top with crumbled feta and serve with flatbread if desired.
