Skillet Salsa Shrimp with Spinach and Feta

Yields: 4 servings

Ingredients:

  • 1 tablespoon olive oil
  • 4 cloves garlic, finely chopped
  • 3 strips lemon zest, thinly sliced
  • 1/2 jar (15.5 oz) salsa
  • 8 oz tomato sauce
  • 20 shrimp, peeled and deveined
  • 2 cups baby spinach
  • 1/4 cup crumbled feta, for garnish
  • Flatbread, for serving (optional)

Directions:

  1. Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the garlic and lemon zest, cooking until the garlic starts to brown, about 1 minute.
  2. Simmer Sauce: Pour in the salsa and tomato sauce. Bring the mixture to a simmer.
  3. Cook Shrimp: Place the shrimp into the sauce, making sure they are submerged. Cover the skillet and cook for 3 minutes.
  4. Add Spinach: Stir in the spinach and cook until it begins to wilt and the shrimp turn opaque, about 1 to 2 additional minutes.
  5. Finish and Serve: Top with crumbled feta and serve with flatbread if desired.
